院里的小香葱依然长势喜人,应姐姐的要求烤个香葱玉米咸味马芬,半个多小时就可以搞定的简单快手马芬,营养又美味,早餐下午茶,户外活动的picnic 甚至孩子们带去学校的lunch box,都不错哦。
准备材料:(12中等大小马芬的量)
•2杯(约330克)普通面粉
•3小勺 泡打粉
•1 小勺 盐
•1小把新鲜香葱,切碎
•1杯 擦碎的奶酪(我用的是切达奶酪)
•1杯甜玉米(新鲜或冷冻皆可)
•4 片培根(约100克),切碎
•2个鸡蛋,打散
•100毫升食用油(我用的是玉米油)
•1杯(250毫升)牛奶
做法:
1.烤箱预热180°C。马芬烤盘刷少许油防沾。
2.面粉 泡打粉和盐混合在大碗中。
3.把香葱 培根和奶酪放入粉类混合物中,稍微搅拌混合。
4.鸡蛋打散,加油和牛奶,用手动打蛋器搅拌至混合均匀。
5.将湿性混合物倒入粉类混合物中,用橡皮刮刀轻轻搅拌均匀。(不需过分搅拌,只要干湿混合看不到干粉就可以了)
6. 用勺子把马芬糊均匀盛入马芬烤盘中,在表面撒些奶酪丝,放入预热好的烤箱烤约25分钟,至颜色变金黄马芬熟透即可。

Muffins with Chive Cheese and Sweetcorn
Ingredients:
- 2 cups(about 330g) all-purpose flour
- 3 tsp baking
powder
- 1 tsp salt
- 1 small bunch fresh chive, chopped
- 1
cup grated cheese ( I used Cheddar cheese)
- 1 cup sweetcorn( fresh or frozen)
- 100g bacon, chopped
- 2 eggs ,
beaten
- 100 ml
cooking oil ( I used rice bran oil)
- 1
cup (250 ml) milk

Extra oil for brushing muffin tin
·
Extra cheese for sprinkling the top of muffin
Instructions:
- Preheat the oven
to 180°C.
Lightly grease the muffin tin with
oil.
- Mix flour baking
powder and salt in a big bowl.
- Put chopped
chive, bacon and grated cheese into above dry ingredient, roughly mix
- Put egg, oil and
milk in a bowl, stir until well mixed.
- Pour the wet
mixture into the dry mixture, stir
gently until just mix. (Don't over mix, as long as there is no dry flour that is
fine)
- Scoop into the
12 muffin holes , sprinkle some cheese on top of muffin mixture , put into
oven and bake for about 25 minutes or
until golden brown.
